I am quite find of strawberries lately. Of course, this is not a surprise as they are in season and the market is loaded with fragrant, locally grown brilliant red berries. They made me think of the times a couple of years ago when we would go to a small place to eat pancakes with milkshakes. There is no place in Budapest right now where people would serve me gluten-, dairy- and sugarfree pancakes or milk shakes/smoothies, however, we enjoy my buckwheat pancakes at home really much. I just needed a strawberry smoothie recipe to accompany them, just like in those good old days… π
So here is a very simple recipe.

My cashew sour cream recipe gave me the idea to use cashews in smoothies, as well for a rich and creamy texture. They worked beautifully.
Ingredients for 2 cups (2x250ml):
50g or 1/2 cup of cashews
approx. 300g or 2 1/2 cups of strawberries
2-3 mint leaves
optional: sweetener to taste (xylitol, stevia liquid/powder, etc.)
- Soak the cashews overnight, or when you need a quick fix, soak them in hot water for 0,5-1 hours.
- Use a blender or a food processor for this: at first, mix the cashews and the mint leaves with some strawberries and 1-2 tablespoons of water, once smooth, add the remaining strawberries.
- Have a taste to check if it’s sweet enough: the sweetness of the fruits might be enough, and you can also add some sweetener of your choice.
- You can add some water for the desired consistency: I used about 1/2 cup. This way, the smoothie turned out creamy and thick, and still worked with a straw.
- Serve in some your favorite glasses and enjoy! π

Guess what: I harvested the mint leaves straight from our very small “garden” on the terrace. I used to have a long history of plants slowly withering under my care which was kind of depressing, so I haven’t had any plants in years. This spring, I received this mint as a birthday gift and it seems it has a great time at our place and is actually growing like crazy, so we took the courage to invest in some other plants: now there are basil, thyme and two cocktail tomatoes on the terrace and so far, they all seem to be enjoying the view. Who knows: I might have the gardening gene after all? π
