I realize that a post on making coffee might not be a huge hit but it plays a really important role in my mornings so there has to be a post on my morning latte on my blog. 🙂
When I started living on a restrictive diet I thought that I had to say goodbye to my morning cup of happiness. I heard some news about caffeine being disadvantageous for insulin resistance, the coffe drinks I used to buy in shops (how embarrassing in retrospective… :)) were loaded with sugar, and to top all this, it turned out that cow’s milk increases insulin levels more than it would be appropriate based on its carbohydrate content (it has a high insulin index).
Fortunately, I figured out a way to decrease the carb content to 4g CH/cup, without cow’s milk: say hello to home-made almond milk! And guess what: the quality of my coffe has improved from embarrassing to café standards. Yes, I had to buy a small espresso machine: worth every penny. So nowadays, I have a sugar- and dairy-free caramel latte like I could buy at a really good café to start my mornings. It wasn’t difficult at all to give up my embarrassing habit of drinking store-bought coffee drinks.

What do you need to make a decent latte?
1 shot of real espresso
150 ml plant based milk
sweetener to taste
For a real espresso shot, you need quality coffe and a good espresso machine. I have a small, household-sized coffe machine which – according to the manufacturer – is still able to produce 15 bar pressure for 20 seconds: the key to a good espresso.
I love lattes, so a working steaming rod was a must for our coffe machine. It’s somewhat more difficult to steam soy or almond milk compared to cow’s milk, but there are no skills nowadays that cannot be mastered with the help of youtube and sufficient time to practice. 🙂
So, each morning it takes me about 5-10 minutes:
- preheat my cup using hot water, pour in the sweetener/sugarfree flavoring syrup,
- brew my espresso,
- steam my soy/almond milk to microfoam,
- pour the milk to the espresso,
- enjoy the morning lights with a latte in my hands. 🙂
I used to commute to work using public transport: it took me about 50 minutes in both directions. I utilized this time to have my morning coffe on the tram while jolting across the city and over the Danube. I changed my place of work last year and now I have to possibility to ride by bicycle which I enjoy really much. Sonce I cannot drink my coffe on the road, now I have it first thing in the morning, right before I start blogging.

I realize that this post on my morning coffe might not be a life changer, I just wished to share my journey from sugary store-bought coffe drinks tossed down on the run to a perfect sugar- and dairy-free latte enjoyed quietly in the early morning hours. There really is hope for everyone. 🙂
