I used to be a very, very picky eater when I was a child. One of the very few things I used to devour whenever I had the chance were eggplants. Some things never change… It’s so comforting to know that they are available all year long now. But still, I’m so happy about the beginning of their season every year. Nothing better than seasonal local produce. We have an eggplant dish at least once a week these days. Rather twice.
Eggplants are low in carbs and fat while high in dietary fibers and loaded with minerals. They are rich in antioxidants – especially the purple skin, so don’t you peel that off! When shopping for eggplants, choose the ones that are firm and shiny, with skin almost black, even under the stem.
Eggplant dishes tend to be really satisfying, a sure success even with non-vegan folks!
