When I saw the first trays of strawberries this spring I decided to challenge myself: make something savory with strawberries this year! (I have a sweet tooth, big time.) I made a huge batch of lentil falafel (recipe coming soon) for a hiking trip and thought that some dip would be nice, or some chutney… strawberry chutney? I know that these nutritious little seeds can be used to make chia jam, but I’ve never tried it myself: hello, strawberry chia chutney!
Chutney has never really been my thing – too sweet for a dip, too spicy for dessert… Until recently I’ve realised how lazy an wonderful it is to make some simple veggie patties for lunch and take a jar of chutney from the shelf. I love about the idea of using chia seeds in jam and chutney that there is almost no cooking needed… Yes, they are nutiritious, too – I’m sure you’ve heard a lot about that so I won’t bore you. 🙂
Strawberry chia chutney:
- biggish chunks of strawberries,
- spicy with freshly ground ginger & lime,
- no added sugar, can be sweetened with some stevia when needed
- almost no cooking: just boil it once and you’re done!
- 2½ cups of strawberries, whole
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- 2 teaspoons of pink peppercorn, freshly ground
- ¼ teaspoons of black pepper, freshly ground
- 1 teaspoon of pink Himalayan salt
- 2 teaspoons of freshly ground ginger
- 1 lime
- 2 ounces (50g) of chia seeds
- a pinch of stevia powder - in case strawberries aren't sweet enough
- Clean and half strawberries. Peel and dice the lime. Put fruits in a food processor and pulse a couple of time - not too much, they should be chunky!
- Pour fruits in a small sauce pan and add all spices and some water (level of water should almost reach the top pf the berries).
- Heat over medium heat until it starts to boil: take off heat, add chia seeds and mix well.
- Taste check for spices, sweeten, if needed and let it set overnight.
