Autumn welcoming salad with plums & feta cheese

Now, that plums are in season, I was wondering how to prepare them in a slightly unusual way. Instead of plum cream soup or plum pie I figured out something more interesting: why not play around with salty & sweet flavors in this salad…?

Ingredients for 2 servings:

a small package of ready-to-serve salad green mix
200g plums
100g (half a package) sheep or goat feta cheese
1 teaspoon of honey
1 teaspoon of balsamic vinegar
1 tablespoon of extra virgine olive oil

Cheeses made exclusively of sheep or goat milk are the only dairy products that I consume, so I was very happy to stumble across some sheep feta cheese. If you’d rather not eat dairy at all, I suggest switching the cheese to salty, roasted pistachos. That would make another great, and also vegan, salad.

  1. Take two salad bowls and put a layer of green leaves on the bottom.
  2. Rinse off the plums, quarter them lenghtways and lay them on the green leaf beds.
  3. Cut the feta cheese into small cubes and spread it over the plum slices.
  4. Quickly prepare the dressing: take the honey, balsamic vinegar, olive oil and mix them well.
  5. Now spread the dressing equally over both salad bowls, serve and enjoy!
Ready in mere minutes and an easy success: we had it two consecutive nights for dinner and the salads were gone in seconds! 🙂 Carb content is about 20g CH/serving, honey and balsamic vinegar included.
